Cheat's cherry ricotta tart

Impress with a simple cherry ricotta tart for your holiday celebration.
Ingredients:
  • 250.00 ml plain flour
  • 27.50 gm moist coconut flakes
  • 90.00 gm brown sugar
  • 100.00 gm rolled oats
  • 120g butter, melted
  • 84.38 gm pure maple syrup
  • 500g smooth ricotta
  • 70.95 gm caster sugar
  • 1 tsp finely grated orange rind
  • Orange zest, to serve
  • Toasted flaked almonds, to serve
  • 141.90 gm caster sugar
  • 1 cinnamon stick
  • 2.50 gm ground ginger
  • 65.63 gm orange juice
  • 300g fresh cherries, stems removed, pitted, halved
Instructions:
  • Preheat your oven to 180C/160C fan-forced and line a large baking tray with parchment paper.
  • In a large bowl, mix flour, coconut, brown sugar, and oats. Add butter and maple syrup, stirring until well combined. Transfer mixture to a prepared tray and press out to form a 22cm circle. Bake for 20 minutes or until edges start to brown. Allow to cool completely on the tray before serving.
  • To prepare the Cherry compote, combine caster sugar, cinnamon, ginger, orange juice, and 1/4 cup cold water in a saucepan over medium heat. Stir for 2 to 3 minutes until the sugar dissolves. Increase heat to medium-high and bring to a simmer. Let it simmer for 2 minutes, then add the cherries. Remove from heat and allow it to cool completely before discarding the cinnamon.
  • With an electric mixer, blend smooth ricotta, sugar, and orange rind. Just before serving, spread the ricotta mixture over the tart base. Add cherry compote on top, sprinkle with orange zest, and toasted almond flakes. Serve and enjoy.
