Indulge in a stunning berry-cherry pavlova with fluffy whipped cream, tangy raspberry coulis, and luscious fresh berries.
Ingredients:
  • 600ml Thickened Cream
  • 24.00 gm icing sugar mixture
  • 80g jam
  • 300g (3 pack) Meringue Disc (see notes)
  • Mixed berries, to serve
  • Cherries, to serve
  • Icing sugar mixture, extra, to dust
  • 300g frozen raspberries
  • 55g icing sugar mixture
Instructions:
  • In a medium saucepan over medium heat, sweeten up the raspberries with icing sugar until they collapse and slightly thicken. Strain through a fine sieve into a jug and chill in the fridge.
  • Use an electric mixer to whip the cream and icing sugar until soft peaks form in a large bowl. Gently fold in the jam using a large metal spoon until marbled through.
  • Start by elegantly arranging 1 meringue disc on a beautiful serving plate. Generously spoon one-third of the luscious cream mixture over the delicate meringue. Repeat this luxurious layering process with the rest of the meringue discs and cream mixture. Finish by artfully adorning the top with a colorful mixture of berries and cherries. Finally, dust the creation with a touch of extra icing sugar, artfully drizzle with the tantalizing raspberry coulis, and serve promptly to dazzle your guests.
