Cheat's enchilada bake recipe

Satisfy your family with layers of smoky chipotle chicken, beans, tortillas, sour cream, and cheese in this delicious Mexican bake.
Ingredients:
  • 18.20 gm extra virgin olive oil
  • 1 red onion, finely chopped
  • 2 garlic cloves, crushed
  • 1 tsp dried oregano
  • 5.00 gm ground cumin
  • 2 tsp ground coriander
  • 810g can crushed tomatoes
  • 225g packet smokey chipotle cooking sauce
  • 2 x 420g cans red kidney beans, drained, rinsed
  • 1000.00 ml shredded cooked chicken (see note)
  • 6 flour tortillas, halved
  • 750.00 ml grated tasty cheese
  • 82.50 ml light thickened cream for cooking
  • 400ml Light Sour Cream
  • 5 red radishes, trimmed, cut into wedges
  • 2 green onions, sliced
  • 1 long red chilli, sliced
  • 1 long green chilli, sliced
Instructions:
  • Preheat your oven to 200C/180C fan-forced and grease a 5cm-deep, 24cm x 28cm (2-litre-capacity) roasting pan.
  • In a large frying pan, heat oil over medium-high heat. Add red onion and cook, stirring, for 5 minutes until softened. Add garlic, oregano, cumin, and coriander. Cook for 1 minute until fragrant. Pour in crushed tomato and cooking sauce, bring to a simmer, then reduce heat to medium-low. Let it simmer for 5 to 6 minutes until slightly thickened. Finally, stir in beans and chicken, and season with salt and pepper. Enjoy!
  • Spread a generous layer of 3/4 cup chicken mixture on the bottom of the dish. Then, add 4 pieces of tortilla, half of the remaining chicken mixture, and 1 cup of cheese. Repeat with another layer of 4 tortilla pieces, the rest of the chicken mixture, and the remaining tortillas.
  • In a bowl, mix cream and half of the sour cream. Season with salt and pepper. Spread this mixture over the bake. Sprinkle with 1 cup of cheese. Bake for 25 to 30 minutes until cheese is golden. Allow it to rest for 10 minutes. Top with the remaining sour cream and sprinkle with the remaining cheese, radish, green onion, and chilies. Serve and enjoy!
