Elevate taco night with this delicious pork enchilada bake, drizzled with green chili and sour cream.
Ingredients:
  • 1 onion, finely chopped
  • 2 cloves garlic, crushed
  • 500g pork mince
  • 5.00 gm ground cumin
  • 1 tsp Mexican chilli powder
  • 1 red capsicum, finely chopped
  • 82.50 ml chopped fresh coriander, plus extra to serve
  • 520g enchilada kit
  • 100g (1 cup) grated 4 cheese melt
  • 1 tomato, chopped
  • 2 spring onions, sliced
  • 1 green chilli, finely sliced, plus extra to serve
  • Sour cream, to serve
  • Lime wedges, to serve
Instructions:
  • 1. Preheat your oven to 200C (180C fan-forced) and grease a 5cm x 22.5cm x 32cm ovenproof dish. 2. In a large non-stick frying pan over medium-high heat, heat oil. 3. Sauté onion and garlic for 2 minutes. 4. Add pork mince to the pan and cook for 3 to 4 minutes, using a wooden spoon to break up any lumps.
  • Sprinkle in cumin and chili powder and cook for 1 minute. Remove from heat and mix in capsicum and coriander. Season generously. Fill tortillas with the mixture, roll them up, and arrange in the pan.
  • Pour the flavorful sauce from the enchilada kit over the dish and generously sprinkle with cheese. Bake until the cheese is gloriously melted and bubbly, and the dish turns a beautiful golden hue, about 15 to 20 minutes.
  • Mix together ripe tomato, fresh spring onion, and spicy green chilli. Sprinkle the colorful mixture over the delicious enchiladas. Accompany with a dollop of tangy sour cream and lime wedges for a vibrant finishing touch.
