Cheat's gelato pavlova recipe

Whip up a quick and delightful gelato pavlova in just 15 minutes!
Ingredients:
  • 4 passionfruit
  • 12.00 gm icing sugar mixture, sifted
  • 1 tsp finely grated lime rind
  • 500g pavlova base
  • 1.2 litres fruit sorbet (see note)
  • 1 kiwifruit, peeled, thinly sliced
  • 1 small mango, thinly sliced
  • 60g blueberries
  • Fresh mint sprigs, to serve
Instructions:
  • Mix together the vibrant passionfruit pulp, sweet icing sugar, and fragrant rind in a small bowl.
  • Transfer the pavlova onto a serving plate. Use a small ice-cream scoop to add scoops of sorbet on top of the pavlova. Garnish with kiwifruit, mango, and blueberries for a vibrant finish.
  • Drizzle pavlova with a splash of the passionfruit mixture, garnish with fresh mint sprigs, and serve right away with the rest of the passionfruit mixture on the side.
