Transform leftover bread into irresistible sticky jam doughnut roll-ups, served warm with a luscious custard drizzle. Each bite is a perfect balance of light, fluffy, and jam-filled deliciousness.
Ingredients:
  • 40.00 gm unsalted butter, at room temperature
  • 6 eggs, lightly whisked
  • 375ml (11 ⁄2 cups) milk
  • 100g (1 ⁄2 cup, firmly packed) brown sugar
  • 5.00 gm ground cinnamon
  • Pinch of table salt
  • 2 x 650g loaves sliced white bread, ends removed (see note)
  • 500g jar raspberry jam
  • Icing sugar, to serve
  • Bought vanilla custard, to serve
Instructions:
  • Prepare a 20cm square baking dish by greasing it with 1⁄2 tbsp of butter. Remove crusts from bread and set aside. In a bowl, combine egg, milk, vanilla, sugar, cinnamon, and salt, whisk until well mixed. Divide the reserved crusts into 4 portions. Dip each portion into the egg mixture and arrange them flat in the dish to cover the base.
  • Flatten 1 bread slice with a rolling pin. Spread with 1 heaped tsp jam, roll up, and place seam-side down on a cutting board. Cut in half crossways. Dip both halves in egg mixture and arrange in a dish standing upright, side-by-side. Repeat with remaining bread slices, jam, and egg mixture. Pour any extra egg mixture over rolls. Cover with foil and let soak for 15 minutes.
  • Preheat your oven to 180C/160C fan forced. Bake the rolls for 25-30 minutes until golden. Then dot the tops with the remaining butter and bake for another 10-15 minutes until butter melts and the tops brown. Let them cool slightly, dust with icing sugar, drizzle with custard, and enjoy warm.
