Indulge in a quick and elegant mille-feuille dessert for a delightful treat.
Ingredients:
  • 375g block frozen puff pastry, thawed
  • 36.00 gm icing sugar, plus extra to serve
  • 300ml thickened cream
  • 200g good-quality vanilla custard
  • 250g punnet strawberries, hulled, halved if large
  • 125g punnet raspberries
  • 125g punnet blueberries
Instructions:
  • Preheat your oven to 200°C and prepare a baking tray by lining it with parchment paper.
  • Sprinkle icing sugar on a clean work surface and roll out the pastry into a 25cm x 30cm rectangle. Place it on the lined baking tray, poke holes all over with a fork, and bake until golden, about 15 minutes. Flip the pastry using a fish slice, then bake for an additional 5-6 minutes until crispy and golden. Let it cool slightly on the tray before transferring to a serving platter to cool completely.
  • Use electric beaters to whip the cream until thick. Gradually mix in the custard until just combined.
  • Smooth the luscious cream mixture over the chilled pastry, then generously heap the vibrant berries on top. Finally, elegantly dust with a flurry of icing sugar before serving.
