Festive make-ahead Christmas trifles for sharing with friends.
Ingredients:
  • 85g packet raspberry jelly
  • 125g raspberries, plus extra to serve
  • 100g white cooking chocolate, chopped
  • 252.50 gm thickened cream
  • 250g mascarpone
  • 75g vanilla melting moments cookie
  • 50g Charlie’s Cookies Mini Melting Moments Raspberry White Choc
  • White choc cream, to serve
  • Raffaellos, to serve
  • Chocolate star, to serve
Instructions:
  • Prepare the jelly as instructed on the packet. Gently pour the jelly into four 350ml glasses. Evenly distribute the raspberries among the glasses. Chill in the fridge for 2 hours until set.
  • Gently melt the chocolate with 1/2 cup of thickened cream in a saucepan over low heat. Allow it to cool until reaching room temperature.
  • Beat the chocolate mixture with mascarpone and the rest of the thickened cream until you get stiff peaks. Crumble melting moments and mini melting moments. Layer them on top of the jelly. Finish by topping with white chocolate cream, Raffaellos, a chocolate star, and extra raspberries.
