Cheat's mini Christmas puddings

Whip up quick and easy Christmas puddings for a stress-free holiday season.
Ingredients:
  • 500g store-bought Christmas cake, crumbled
  • 125ml milk
  • 4 eggs
  • 85g fruit mince
  • 60ml sherry
  • Custard, to serve
  • Glace cherries, to serve
Instructions:
  • Preheat the oven to 180°C and generously grease four 1-cup (250ml) dariole moulds or ramekins.
  • Combine cake, milk, eggs, fruit mince, and Pedro Ximenez in a food processor by pulsing a few times. Distribute the mixture among the moulds, cover with foil. Place in a deep baking dish, pour boiling water halfway up the sides of the moulds. Bake for 45 minutes, or until firm. Remove from the oven and let rest for 10 minutes before serving.
  • Invert the puddings onto plates, then elegantly drizzle with custard and garnish with glace cherries.
