Cheat's slow-roasted tomatoes

Elevate your home cooking with budget-friendly canned tomatoes for a gourmet twist on any dish.
Ingredients:
  • 6 x 400g cans whole peeled tomatoes
  • 6 garlic cloves, peeled, halved
  • 8 sprigs fresh oregano
  • 8 sprigs fresh thyme
  • 36.40 gm extra virgin olive oil
  • 2.40 gm sea salt
  • 1/2 tsp cracked black pepper
  • Olive oil, to store
Instructions:
  • Preheat the oven to 140C (120C fan-forced).
  • Prepare the tomatoes by draining them and cutting each one in half lengthwise. Gently pat them dry with a paper towel. Place the tomatoes on 2 large rimmed baking trays in a single layer, cut-side up. Evenly distribute the garlic, oregano, and thyme on the trays. Drizzle with oil and season with sea salt and cracked black pepper.
  • Bake tomatoes until collapsed, about 2 hours. Let cool, discard herbs and garlic. Transfer tomatoes to an airtight container and cover with olive oil. Chill for up to 1 week. To use, drain tomatoes, pat dry, and add to various dishes like stews, soups, pasta, salads, and dressings.
