Indulgent tiramisu cake made with ricotta, chocolate, and coffee - a decadent twist on the classic Italian dessert.
Ingredients:
  • 500g fresh ricotta
  • 53.75 gm caster sugar
  • 62.50 ml coffee-flavoured liqueur
  • 80g dark chocolate, finely chopped
  • 1/2 x 460g packaged double unfilled sponge cake
  • 125.00 ml espresso coffee, cooled
  • 99.00 gm icing sugar mixture
  • 10.00 gm cocoa powder, sifted
  • 5.00 gm butter, softened
  • 30.90 gm milk
  • Shaved dark chocolate, to serve
Instructions:
  • Beat ricotta, sugar, and liqueur with an electric mixer until smooth for about 2 minutes. Gently fold in chocolate.
  • 1. With a sharp serrated knife, slice the cake horizontally into three equal layers. 2. Place the bottom layer on a serving plate and gently brush it with one-third of the coffee. 3. Spread half of the ricotta evenly over the coffee-brushed layer. 4. Carefully position the middle cake layer over the ricotta filling. 5. Brush half of the remaining espresso over the middle layer. 6. Spread the rest of the ricotta mixture on top of the espresso-brushed layer. 7. Brush the cut side of the top cake layer with the leftover coffee. 8. Finally, place the top cake layer over the ricotta mixture, cut-side down.
  • In a small bowl, mix icing sugar and cocoa. Create a well in the center and add butter and milk. Stir until well combined. Spread the mixture over the cake, then refrigerate for 1 hour. Top with shaved chocolate before serving.
