Cheat's Turkish pizzas recipe

Try quick and flavorful Turkish pizzas for an easy dinner!
Ingredients:
  • 280g packet garlic naan bread
  • 1 red onion
  • 2 thick lamb sausages
  • 45.50 gm extra virgin olive oil
  • 250.00 ml grated mozzarella
  • 50g fetta, crumbled
  • 4 eggs
  • 1 baby cos lettuce, leaves torn
  • 4 radishes, thinly sliced
  • 62.50 ml small fresh mint leaves
  • 20.00 ml red wine vinegar
  • Sumac, to serve
  • Sriracha chilli sauce, to serve
  • Fresh flat-leaf parsley leaves, to serve
  • Lemon wedges, to serve
Instructions:
  • Preheat the oven to 220C/200C fan-forced. Line 2 large baking trays with baking paper and place the bread on the trays.
  • Finely chop half of the onion. Remove casings from sausages. Heat 2 teaspoons of oil in a large frying pan over medium-high heat. Crumble sausage into the pan and add the chopped onion. Cook for 3 minutes, stirring occasionally, until sausage is browned. Spread the sausage mixture evenly over the bread. Sprinkle with cheeses. Create a small indent in the center of the toppings. Bake for 3 minutes. Crack an egg into each indent. Season with salt and pepper. Bake for 8 to 10 minutes until whites are set but yolks are still runny.
  • Thinly slice the remaining onion. Combine lettuce, radish, mint, and onion in a large bowl. Drizzle with vinegar and remaining oil. Season with salt and pepper, then toss to mix well.
  • Enhance eggs with a sprinkle of sumac. Drizzle pizzas with sriracha, top with parsley. Serve alongside salad and lemon wedges.
