Cheerios® Skinny Coconut Cream Pie

Healthier twist on classic recipe with whole-grain Cheerios® crust, packed with fiber and less saturated fat.
Ingredients:
  • 2 1/2 cups Cheerios™ cereal
  • 3 tablespoons sugar
  • 1/4 cup no trans-fat 68% vegetable oil spread stick, melted
  • 3/4 cup fat-free (skim) milk
  • 1/2 cup canned light coconut milk (not cream of coconut)
  • 1 teaspoon vanilla
  • 1 box (4-serving size) vanilla instant pudding and pie filling mix
  • 1/2 cup coconut
  • 2 cups frozen (thawed) fat-free whipped topping
  • Toasted coconut, if desired
Instructions:
  • Preheat the oven to 350°F. Place cereal in a plastic bag and crush it finely using a rolling pin, meat mallet, or a food processor until you have 1 cup.
  • In a medium bowl, combine crushed cereal and sugar using a fork. Add melted vegetable oil spread and mix well. Press the mixture into the bottom and up the sides of a 9-inch glass pie plate. Bake for 10 minutes, then let cool completely for about 30 minutes.
  • Combine milk, coconut milk, and vanilla in a large bowl. Whisk in pudding mix until smooth and slightly thickened. Fold in 1/2 cup coconut and 1/2 cup whipped topping. Spread the mixture evenly into the crust. Chill for at least 4 hours until set.
  • Before serving, generously layer the remaining 1 1/2 cups of whipped topping on top, and then sprinkle with toasted coconut.
