Toss chopped veggies with creamy mayo, crispy bacon, and cheese, bake in a pie shell, and serve with garlic mashed potatoes.
Ingredients:
  • 1 (9 inch) deep dish pie crust
  • 3 vine-ripened tomatoes
  • 1 small onion
  • 0.25 cup chopped green bell pepper
  • 0.75 cup mayonnaise
  • 0.5 cup shredded sharp Cheddar cheese
  • 0.5 cup shredded mozzarella cheese
  • 3 slices bacon
  • 2 slices bacon, for topping
Instructions:
  • Preheat your oven to 350°F (175°C) for the perfect cooking temperature.
  • - Bake the pie shell for 9 to 10 minutes until golden. - In a large, deep skillet, crisp the bacon over medium-high heat. - Once evenly browned, drain, crumble, and set aside.
  • Dice the tomatoes, onion, and green bell pepper into bite-sized pieces.
  • Combine the mayonnaise, cheeses, veggies, and bacon in a large bowl. Transfer the mixture to the pre-baked pie crust and garnish with more crumbled bacon.
  • Bake at 350 degrees F until edges are beautifully golden, about 25 minutes.
