Toasted rustic bread with creamy Boursin cheese and ripe garden tomatoes.
Ingredients:
  • 2 to 4 slices of French or Italian loaf bread
  • Herbed Boursin cheese, about 2 tablespoons per bread slice
  • 1 medium to large vine-ripened tomato
  • Coarse salt, fleur de sel or Kosher salt
  • Freshly ground black pepper
Instructions:
  • Toast the bread in a toaster or toaster oven.
  • Slice the tomato into 1/4-inch slices while the bread is toasting.
  • After lightly toasting the bread, spread one side with creamy Boursin cheese. Layer a few slices of ripe tomato on top, overlapping as needed. Finish with a sprinkle of sea salt and freshly ground black pepper. Enjoy right away.
