Simple, comforting classic dish perfect for family meals.
Ingredients:
  • 2 garlic cloves, chopped, plus 1 halved
  • 4 slices pancetta
  • 2 tsp chopped rosemary
  • 62.50 ml chopped parsley, plus extra to serve
  • 600g beef mince
  • 1/2 tsp chilli flakes
  • 44.40 gm tomato paste
  • 1 egg
  • 250g punnet cherry tomatoes, halved
  • 750ml passata
  • 4.00 gm brown sugar
  • 2 tsp red wine vinegar
  • 8 slices ciabatta
  • 80g parmesan
Instructions:
  • Combine the chopped garlic, pancetta, rosemary, and parsley in a food processor and pulse until finely chopped. Transfer the mixture to a bowl, add the mince, chili, tomato paste, and egg, then thoroughly mix everything together by hand. Shape the mixture into 3cm balls and refrigerate for 30 minutes.
  • Preheat your oven to 180°C.
  • 1. Heat oil in a pan over medium-high heat. Brown meatballs in batches for 4-5 minutes. 2. Transfer meatballs and cherry tomatoes to a baking tray. 3. Drizzle tomatoes with oil, season, and bake for 10 minutes until meatballs are cooked through and tomatoes are tender.
  • While the meatballs and tomatoes wait, simmer passata, sugar, and vinegar in a pan over medium heat. Season to taste, then gently mix in the meatballs and tomatoes to heat through in the flavorful sauce.
  • Toast or chargrill the bread until golden brown, then rub the halved garlic clove all over it for extra flavor.
  • Top toast with meatballs and sauce, sprinkle with parmesan and parsley for a delicious presentation.
