Mexican-Style Spaghetti and Meatballs

Spicy turkey meatballs with a Mexican twist on classic spaghetti and meatballs.
Ingredients:
  • 1 pound ground turkey
  • 1.5 teaspoons Mexican-style chili Powder
  • 1 teaspoon guajillo chile powder
  • 0.5 teaspoon salt
  • 0.5 teaspoon ground black pepper
  • 1 tablespoon grated Parmesan cheese
  • 1 tablespoon olive oil
  • 0.5 onion, finely chopped
  • 1 small jalapeno pepper, seeded and minced
  • 0.5 Anaheim (New Mexico) chile pepper, seeded and minced
  • 2 tostada shells, crushed into fine crumbs
  • 0.25 cup bread crumbs
  • 1 (16 ounce) package spaghetti
  • 1 (14.5 ounce) can diced tomatoes
  • 0.5 onion, diced
  • 1 chipotle chile in adobo sauce, finely chopped
  • 1 (24 ounce) jar spaghetti sauce
  • 1 tablespoon taco seasoning mix
Instructions:
  • Preheat your oven to 350 degrees F (175 degrees C) and line a baking sheet with aluminum foil, lightly greasing it with cooking spray.
  • Combine ground turkey with Mexican chili powder, guajillo chile powder, salt, black pepper, and Parmesan cheese in a large mixing bowl. Add egg, olive oil, chopped onion, jalapeno pepper, and Anaheim pepper. Use your hands to mix until well combined. Sprinkle with tostada crumbs and bread crumbs, then mix until fully incorporated. Shape into 1-inch meatballs and arrange on a baking sheet.
  • Roast in the oven until the meatballs are golden and cooked through, about 40 minutes, flipping halfway through for even browning.
  • 1. Fill a large pot with lightly salted water and bring it to a vigorous boil. Add spaghetti and cook uncovered, stirring occasionally, until al dente, about 12 minutes. Drain thoroughly in a colander.
  • Combine diced tomatoes, onion, chipotle chile, spaghetti sauce, and taco seasoning in a large saucepan. Simmer over medium-high heat until it reaches a gentle boil, then lower the heat and simmer for 10-15 minutes until the onion is soft.
  • Add the cooked meatballs to the sauce and simmer for an additional 5 minutes. Serve the meatballs and sauce over the spaghetti.
