Cheese and onion roast chicken

Classic roast chicken with cheese stuffing, crispy potatoes, and juicy tomatoes.
Ingredients:
  • No. 14 chicken (see note)
  • 125g tasty cheese, grated
  • 1 small brown onion, finely chopped
  • 24.40 gm Worcestershire sauce
  • 1kg potatoes
  • olive oil spray
  • 250g cherry tomatoes
  • 4 zucchini, thinly sliced
Instructions:
  • Preheat the oven to 200°C. Wash the chicken and then gently dry it with paper towels.
  • Mix together the cheese, onion, and Worcestershire sauce in a bowl. Gently separate the chicken breast skin from the flesh with your fingers and stuff the cheese mixture in between.
  • Tie chicken legs with string, tuck wings underneath, and place in a greased roasting pan or ceramic dish.
  • Prepare the potatoes by giving them a good scrub. Place them around the chicken on the baking sheet. Drizzle oil over the chicken and potatoes. Sprinkle with salt. Roast in the oven for 1 hour.
  • Place vibrant tomatoes and fresh zucchini in an ovenproof dish, then generously spray with oil. Bake in the oven on the shelf below the chicken for an additional 30 minutes, or until the chicken is cooked through and the tomatoes are tender.
  • Allow the chicken to rest for 15 minutes, then carve it and enjoy it with the roasted vegetables.
