Spicy vegetable soup with fat-free American cheese and skim milk.
Ingredients:
  • 3 cups vegetable broth
  • 3 potatoes, cubed
  • 0.5 cup chopped onion
  • 0.5 cup chopped carrots
  • 0.25 cup chopped celery
  • 5 slices fat-free American cheese
  • 0.5 cup skim milk
  • 1 tablespoon hot pepper sauce
  • 3 tablespoons chopped fresh parsley
Instructions:
  • - In a medium saucepan over high heat, mix broth, potatoes, onions, carrots, and celery. Bring to a boil, then simmer covered on low for about 15 minutes until potatoes are tender. Lightly mash with a potato masher.
  • Incorporate American cheese, milk, and hot sauce into the mixture and cook over low heat until the cheese is melted, stirring occasionally. Season with salt and pepper to your liking. Sprinkle with fresh parsley and hot pepper sauce for a flavorful finish.
