Decadent cheese tortellini tossed in walnut, Parmesan, and parsley pesto.
Ingredients:
  • 1 cup walnuts
  • 0.5 cup olive oil
  • 0.33333334326744 cup lightly packed flat-leaf parsley leaves
  • 4 tablespoons grated Parmesan cheese, divided
  • 2 cloves garlic, smashed
  • 0.5 teaspoon salt
  • 0.25 teaspoon freshly ground black pepper
  • 1 pound fresh cheese tortellini
  • 1 tablespoon salted butter
Instructions:
  • Combine walnuts, oil, parsley, 3 tablespoons Parmesan cheese, garlic, salt, and pepper in a food processor or blender and pulse until a coarse puree forms.
  • In a large pot, bring lightly salted water to a rolling boil. Add tortellini and cook until they float to the top and the filling is hot, about 7 to 8 minutes. Drain tortellini, saving 1/2 cup of cooking water.
  • Mix tortellini with a quarter cup of reserved pasta water, walnut pesto, and butter. If needed, add additional cooking water for desired consistency. Finish with a sprinkle of one tablespoon Parmesan cheese and serve extra at the table.
