Irresistible crispy plantain balls oozing with melted cheese.
Ingredients:
  • 5 whole green plantains, unpeeled
  • 1 tablespoon salt
  • 0.5 teaspoon ground black pepper
  • 1.5 cups queso fresco, cut into 1/2 inch cubes
  • 4 cups vegetable oil for frying
Instructions:
  • Boil the whole plantains in enough water to cover until tender and skins have cracked, about 45 minutes. Drain and let cool before handling.
  • Preheat oil in a deep-fryer or large saucepan to 375°F (190°C).
  • Peel the plantains and mash them with salt and pepper until smooth. Encase a cube of cheese with 3 tablespoons of the mashed plantain mixture, shaping them into balls. Fry the plantain balls in batches in hot oil until they turn golden brown and float to the surface, approximately 5 minutes. Rotate the balls while cooking for even browning. Once done, place the plantain balls on a paper towel-lined plate to cool down a bit.
