Strawberry rainbow chip cheesecake bites – irresistibly tasty!
Ingredients:
  • 1 cup graham cracker crumbs
  • 2 tablespoons sugar
  • 3 tablespoons butter, melted
  • 2 packages (8 oz each) cream cheese, softened
  • 1/2 cup sugar
  • 1 teaspoon vanilla
  • 2 eggs
  • 1/4 cup strawberry fruit spread
  • 1 cup from 1 tub (16 oz) Betty Crocker™ Original Rainbow Chip Frosting
  • Small strawberries, if desired
Instructions:
  • Preheat the oven to 325°F. Line 18 regular-size muffin cups with paper baking cups and gently spray them with cooking spray. In a small bowl, combine the Crust ingredients. Divide the mixture evenly among the muffin cups and press it down slightly.
  • In a large bowl, use an electric mixer on medium speed to blend cream cheese, 1/2 cup sugar, and vanilla until smooth. Add the eggs one at a time, mixing just until combined. Fill muffin cups three-fourths full with the batter.
  • Bake for 24 to 26 minutes until the filling is set. Let it cool for 10 minutes, then remove from the pan onto a cooling rack. Allow it to cool completely for about 30 minutes.
  • Combine fruit spread and frosting in a small bowl, then spread the mixture over the cupcakes. Chill in the refrigerator for about 2 hours. Lastly, top each cupcake with a small half of a strawberry for garnish.
