Delicious Cheesy Corn Casserole with Cheddar, cream cheese, and bacon - perfect for Thanksgiving or any holiday!
Ingredients:
  • 4 ounces cream cheese, softened
  • 0.5 cup whole milk
  • 0.25 cup heavy cream
  • 3 tablespoons all-purpose flour
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 4.5 cups defrosted frozen corn, drained on paper towels
  • 3 cups shredded Cheddar cheese, divided
  • 10 slices cooked bacon, crumbled
  • kosher salt to taste
  • freshly ground black pepper
  • 2 tablespoons chives for garnish
Instructions:
  • Preheat the oven to 350°F (175°C) and generously grease a casserole dish.
  • In a large bowl, combine cream cheese, milk, cream, flour, paprika, and garlic powder until smooth. Gently mix in corn, 2 1/2 cups Cheddar cheese, and crumbled bacon. Season with salt and pepper. Transfer the mixture to a casserole dish and top with the remaining Cheddar cheese before baking.
  • Bake until cheese is melted and lightly browned in the preheated oven for about 20 minutes. Allow to cool for 5 minutes, then sprinkle with chives before serving.
