Cheesy Broccoli and Vegetable Soup

Cozy up to a comforting creamy soup made with a medley of frozen veggies and melty processed cheese - ideal for chilly days!
Ingredients:
  • 1 (16 ounce) package frozen California mixed vegetables (cauliflower, broccoli, and carrots)
  • 1 (16 ounce) bag frozen broccoli
  • 2 (14.5 ounce) cans chicken broth
  • 0.25 cup butter
  • 0.5 cup all-purpose flour
  • 2 cups milk
  • 1 (1 pound) loaf processed cheese food (such as Velveeta®), cubed
Instructions:
  • In a large soup pot, combine mixed vegetables and frozen broccoli. Add chicken stock and bring to a boil. Reduce heat to medium-low and simmer until vegetables are tender, around 20 minutes.
  • In a saucepan over medium heat, melt butter until smooth and lightly colored. Add flour and cook until smooth. Slowly whisk in milk and simmer until thickened, around 10 minutes. Stir in cheese until melted; combine with vegetables. Cook until vegetables are tender, about 5 minutes.
