Ingredients:
  • 1 large brown onion, roughly chopped
  • 2 garlic cloves, chopped
  • 900g cauliflower, cut into small florets
  • 10 thyme sprigs
  • 36.40 gm extra virgin olive oil
  • 300g (2 cups) cooked medium-grain rice
  • 300ml double cream
  • 125ml (1/2 cup) milk
  • 160g (2 cups) grated cheddar cheese
  • 40.00 ml chopped flat-leaf parsley leaves, to serve
Instructions:
  • Preheat your oven to a toasty 220C/200C fan forced.
  • In a large baking dish, combine the onion, garlic, cauliflower, thyme, and oil. Season the mixture and toss well to ensure everything is coated. Bake at 400°F for 40 minutes, stirring halfway through, until the cauliflower is golden and tender.
  • Combine rice, cream, milk, and half of the cheese in a baking dish. Season to taste and mix well. Sprinkle the rest of the cheese on top, then bake for 15 minutes or until golden brown.
  • Garnish with fresh parsley before serving.
