Indulge in the ultimate creamy and cheesy slow cooker chicken spaghetti with a dazzling duo of cream cheese and sharp Cheddar.
Ingredients:
  • 2 tablespoons salted butter
  • 1 (8 ounce) package sliced fresh mushrooms
  • 1 medium red bell pepper, diced
  • 2 pounds skinless, boneless chicken breasts
  • 1 (23 ounce) can condensed cream of mushroom soup
  • 1 (14 ounce) can diced tomatoes, drained
  • 2 teaspoons seasoned salt
  • 3 cloves garlic, minced
  • 1 (8 ounce) package shredded sharp Cheddar cheese
  • 1 (8 ounce) package cream cheese
  • 1 (16 ounce) package spaghetti
Instructions:
  • In a skillet set over medium-high heat, melt the butter until sizzling. Saute the mushrooms and bell pepper until tender, approximately 3 minutes. Transfer the mixture to a slow cooker.
  • Place chicken in the slow cooker and pour in condensed soup, diced tomatoes, Worcestershire sauce, seasoned salt, and garlic. Cook covered until chicken is cooked through, about 3 1/2 hours on Low or 2 hours on High. Chicken is done when it reaches an internal temperature of 165°F (74°C). Let chicken rest for 5 minutes before handling.
  • Combine Cheddar cheese and cream cheese in the slow cooker. Shred the cooled chicken with 2 forks and add it back to the slow cooker. Increase temperature to High and cook until cheese is melted, 10 to 15 minutes.
  • While you wait, get a big pot of lightly salted water boiling. Cook spaghetti until just right - tender yet firm - stirring occasionally, for about 12 minutes. Drain and add to the slow cooker. Give it a good stir and it's ready to serve.
