Cheesy Chorizo Frittata

Spicy chorizo, vibrant spinach, juicy cherry tomatoes, and gooey cheese make a tantalizing frittata.
Ingredients:
  • 0.25 pound chorizo, crumbled
  • 1 (6 ounce) package baby spinach leaves
  • 2 cups cherry tomatoes, halved
  • 4 green onions, sliced
  • 6 eggs
  • 0.5 cup milk
  • 1.5 cups KRAFT Shredded Pepper Jack Cheese with a TOUCH OF PHILADELPHIA, divided
Instructions:
  • - Preheat your oven to 375 degrees F (190 degrees C). - Cook chorizo in a large oven-proof skillet over medium-high heat until fully cooked, stirring frequently. Set aside the chorizo, keeping the drippings in the skillet. - Add spinach to the skillet and cook for 2 minutes, stirring occasionally, until wilted. - Stir in tomatoes, onions, and the cooked chorizo. - Remove the skillet from the heat.
  • In a medium bowl, combine eggs and milk, whisking until smooth. Stir in 1 cup of cheese. Pour mixture into skillet with other ingredients, gently stirring until combined. Sprinkle remaining cheese on top.
  • Bake for 25 minutes, or until a knife inserted in the center comes out clean.
