Creamy stovetop cheese polenta pairs perfectly with slow-cooked meats or roasted veggies.
Ingredients:
  • 2 cups whole milk
  • 2 cups water
  • 1.5 teaspoons kosher salt
  • 1 cup polenta or yellow cornmeal
  • 4 tablespoons unsalted butter
  • 0.5 teaspoon freshly ground black pepper
  • 4 ounces sharp Cheddar cheese, shredded
Instructions:
  • In a large pot over medium-high heat, bring milk, water, and kosher salt to a boil. Gradually whisk in polenta. Cover, reduce heat to low, and simmer for about 20 minutes, stirring occasionally to keep it creamy and prevent sticking.
  • Off the heat, blend in butter and pepper until well combined. Slowly mix in cheese until it melts. Serve piping hot.
