Cozy up midweek with a comforting and hearty dinner to beat the chill.
Ingredients:
  • 4-6 pork cutlets
  • 150.00 gm instant polenta
  • 892.50 gm chicken style liquid stock
  • 50g unsalted butter, chopped
  • 125.00 ml parmesan
  • salt and pepper to taste
  • 3 tsp balsamic vinegar
  • 2 tsp chopped fresh sage
  • 400g can chopped peeled tomatoes
  • 2.25 gm sugar
Instructions:
  • In a saucepan over high heat, bring tomatoes to a boil. Add sugar, vinegar, salt, and pepper. Stir constantly for 2-3 minutes until slightly reduced. Mix in sage, cover, and set aside.
  • In a large non-stick frying pan over high heat, sear the cutlets for 4 minutes on each side until golden brown and fully cooked. Cover with foil to keep warm after removing from heat.
  • Bring the chicken stock to a boil in a saucepan, then add the polenta. Reduce heat to low and stir constantly for 4-5 minutes until soft. Mix in the butter, Parmesan cheese, salt, and pepper.
  • Plate the pork cutlets over a creamy polenta base, topped with zesty tomato relish and a side of fresh salad.
