Southern-style cheesy grits topped with savory spiced sausages and succulent prawns create a delectable and comforting dish.
Ingredients:
  • 250 g medium ground grits, fine cornmeal or white polenta
  • 50 g butter
  • 100 g freshly grated Cheddar cheese
  • 6 higher-welfare pork sausages
  • olive oil
  • 300 g raw peeled king prawns from sustainable sources
  • 2 cloves of garlic peeled and finely chopped
  • ½ teaspoon smoked paprika
  • a knob of butter
  • ½ a bunch of fresh flat-leaf parsley (15g) finely chopped
Instructions:
  • Prepare the grits or cornmeal according to package instructions. Stir constantly to avoid lumps until cooked, then add butter, cheese, and seasoning to taste. Keep warm with lid on. In a large frying pan over medium heat, form sausage meat into small balls and cook until they are browned all over. Add prawns, garlic, and smoked paprika, cook until prawns are done, then stir in butter, lemon juice, parsley, salt, and pepper. Combine grits and topping in the pan, stir to absorb flavors. Serve hot and enjoy!
