Indulgent cake perfect for celebrating birthdays, Father's Day, weddings, or any chocolate lover's special day.
Ingredients:
  • Melted butter or margarine, for greasing
  • 400g good quality dark cooking chocolate, chopped
  • 375g unsalted butter, chopped
  • 330g (1 1/2 cups) caster sugar
  • 310mls (1 1/4 cups) freshly brewed strong coffee
  • 3 large eggs, lightly whisked
  • 375g (2 1/2 cups) plain flour
  • 8.00 gm baking powder
  • 300g good quality dark cooking chocolate, finely chopped
  • 125g unsalted butter, chopped
Instructions:
  • Preheat the oven to 160°C. Grease a 22cm round or 20cm square cake pan with melted butter or margarine, then line the base with non-stick baking paper.
  • In a large saucepan, melt the chocolate, butter, caster sugar, and coffee over medium heat until well combined. Remove from heat, whisk in the eggs until fully mixed. Sift in the flour and baking powder, stirring until smooth.
  • Transfer the mixture into the prepared pan and bake in a preheated oven for 1 1/2 hours or until a skewer inserted into the center of the cake comes out with cake crumbs sticking to it. Let it sit in the pan for 10-20 minutes before transferring it onto a wire rack to cool.
  • In a heat-resistant bowl, melt the chocolate and butter together over simmering water until smooth. Take off the heat.
  • Smooth the top of the cake as needed. Invert the cake onto a tray. Drizzle the chocolate glaze evenly over the cooled cake and spread using a spatula. Let the cake rest in a cool spot for about 20 minutes until the glaze is set, avoiding the fridge to maintain its glossy finish. Place the cake on a platter and decorate to your liking, such as tying a bow around a candle for a festive touch.
