Prosciutto-wrapped pork with polenta recipe

Quick and savory Italian pork with creamy polenta - ideal for a cozy winter weeknight meal in just 25 minutes!
Ingredients:
  • 8 slices prosciutto
  • 2 Pork Fillets
  • 62.50 ml sage leaves
  • 9.20 gm olive oil
  • 750ml chicken stock
  • 170g polenta
  • 20g parmesan
  • 125ml thickened cream
Instructions:
  • Lay out the prosciutto slices on a clean work surface, slightly overlapping, to create a square shape. Line up the pork fillet along one edge of the prosciutto. Sprinkle half of the sage on top of the pork. Roll the prosciutto around the pork tightly. Repeat the process with the remaining prosciutto, pork, and sage. Use a large sharp knife to slice the pork into 3cm-thick pieces.
  • In a large frying pan over medium-high heat, heat the oil. Season the pork and cook each side for 2 1/2 minutes until golden and cooked through. Transfer to a plate, cover with foil, and let it rest for 5 minutes before serving.
  • Add the mustard and 1 cup (250ml) stock to the pan. Bring to a boil and stir occasionally for 2 minutes until the sauce reduces by half.
  • In a large saucepan, combine the remaining stock with 1 cup (250ml) water and bring to a boil over high heat. Lower the heat and slowly pour in the polenta while whisking continuously. Cook and stir for 5 minutes until the polenta thickens. Finally, mix in the parmesan and cream.
  • Spread a generous portion of polenta on each plate. Arrange the pork on top. Season to taste and finish by drizzling with the flavorful mustard sauce. Enjoy!
