Tangy sour cherry jam elevates this simple sauce.
Ingredients:
  • 2 large potatoes, peeled, chopped
  • 400g butternut pumpkin, peeled, chopped
  • 41.20 gm reduced-fat milk, warmed
  • 4 wide slices prosciutto
  • 400g pork fillet
  • 4.60 gm extra virgin olive oil
  • 125ml (1/2 cup) red wine
  • 40.00 ml sour cherry jam
  • Steamed broccolini, to serve
Instructions:
  • Preheat oven to 180C/160C fan forced. Boil potato and pumpkin until tender, then drain. Mash with milk until smooth. Season to taste and keep warm.
  • Lay prosciutto slices slightly overlapping on a clean chopping board, then place pork on top and wrap the prosciutto around the pork. Heat oil in an ovenproof frying pan over medium-high heat and cook the pork, turning, for 5 minutes until browned. Roast in the oven for 8-10 minutes until just cooked through. Rest the pork on a plate for 5 minutes before slicing.
  • - Return the pan to medium-low heat and add red wine to deglaze. Stir in jam and bring to a simmer. Cook, stirring occasionally, for 4-5 minutes until thickened. Season to taste.
  • Spoon mashed potatoes onto plates. Arrange pork on top and generously drizzle with sauce. Serve alongside broccolini.
