Prosciutto-wrapped pork fillet with tamarillo salsa

Elevate pork with prosciutto and tangy tamarillo salsa.
Ingredients:
  • 2 pork fillets (about 500g)
  • 12 fresh sage leaves
  • Salt & freshly ground pepper
  • 6 slices prosciutto (about 100g)
  • 36.40 gm olive oil
  • 2 firm tamarillos
  • 1/2 small red onion, finely diced
  • 8.00 gm brown sugar
  • Mashed potato, to serve
Instructions:
  • Preheat your oven to 200°C. Place sage leaves on top of the pork fillets, season with salt and pepper, and wrap them with prosciutto to seal in the flavors.
  • Heat olive oil in a skillet over medium-high heat. Sear pork fillets for 5-7 minutes, flipping to evenly brown.
  • Lay pork fillets on a baking tray, gently cover with foil, and bake for an additional 7 minutes or until desired doneness is achieved.
  • Peel the tamarillos, finely dice them, and combine with red onion and brown sugar. Add a touch of salt to taste.
  • Slice the warm pork fillet and arrange it with mashed potato, then drizzle with the tamarillo salsa before serving.
