Prosciutto pork fillet

Elegant roasted pork fillet wrapped in pesto prosciutto, served with creamy gnocchi, peas, and crispy sage. A show-stopping meal bursting with flavor and satisfaction.
Ingredients:
  • 500 ml semi-skimmed milk
  • 60 g Parmesan cheese
  • 500 g potato gnocchi
  • 320 g frozen peas
  • 8 slices of higher-welfare prosciutto
  • olive oil
  • 2 tablespoons green pesto
  • 1 x 500 g piece of higher-welfare pork fillet
  • ½ a bunch of sage (10g)
Instructions:
  • Preheat the oven to 220°C/425°F/gas 7. Blend milk, most of the cheese, 10 gnocchi, and a pinch of black pepper until smooth. In a frying pan, combine remaining gnocchi and peas, heat with the sauce until boiling. Lay prosciutto slices on greaseproof paper, spread pesto on top. Rub pork with black pepper, wrap in prosciutto, place on a baking tray. Grate cheese over gnocchi, then bake both in the oven for 30 minutes. 5 minutes before done, baste pork with sage and its juices, tear sage leaves over, then bake until finished. Let pork rest for 5 minutes, then serve with gnocchi and tray juices.
