Ingredients:
  • 800 g potatoes
  • 400 g piece of higher-welfare pork fillet
  • 2 sprigs of fresh sage
  • 40 g Cheddar cheese
  • 4 slices of higher-welfare prosciutto
Instructions:
  • 1. Preheat the grill to high. 2. Wash the potatoes, chop into 3cm chunks, and boil in salted water for 12 minutes until tender. 3. Heat a casserole pan, season pork with sea salt and black pepper, sear in olive oil for 3 minutes, then set aside. 4. Toss sage leaves in the pan for 5 seconds, remove, and set aside. 5. Drain the potatoes, add half of the cheese, olive oil, and mash well. 6. Grate the remaining cheese over the mashed potatoes, place the pork on top, and grill for 10 minutes. 7. Arrange prosciutto around the pork, sprinkle crispy sage, grill for 2 more minutes. 8. Rest pork for 2 minutes, slice, and serve.
