Simple and delicious marmalade-glazed pork with creamy mashed potatoes, a guaranteed family favorite.
Ingredients:
  • 800g desiree potatoes (about 4), cut into equal-sized pieces
  • 18.20 gm olive oil
  • 800g pork fillet, trimmed, cut into 8 medallions
  • 80ml milk
  • 50g unsalted butter
  • 2 handfuls wild rocket, to serve
  • 250ml beef stock
  • 82.50 gm orange marmalade
  • 2 tsp balsamic vinegar
  • 4.00 gm brown sugar
Instructions:
  • Preheat the oven to 200°C, then mix the glaze ingredients together and set aside.
  • In a saucepan, immerse the potatoes in salted water, bring to a boil, and simmer for 15-20 minutes until the potatoes are tender. Adjust cooking time as needed based on the size of potato pieces.
  • Heat oil in a large frypan over medium-high heat and sear pork for 3 minutes on each side until golden brown. Transfer to a baking tray and bake in the oven for 10 minutes until fully cooked.
  • Lower the stove to medium heat and pour in the glaze mixture into the frypan.
  • Cook until the mixture thickens and can coat the back of a spoon, approximately 5 minutes.
  • After draining the potatoes, briefly heat them to remove excess moisture. Mash or rice the potatoes, then combine with milk, butter, salt, and pepper. Serve a portion of mashed potatoes and 2 pork medallions on each plate. Drizzle with glaze and accompany with arugula.
