Elevate glazed ham with a tasty pistachio crust for extra crunch.
Ingredients:
  • 4.2kg ham, on the bone
  • 330.00 gm lime marmalade
  • 90.00 gm brown sugar
  • 2 limes, rind shredded, juiced (1/4 cup)
  • 75g pistachio kernels, roughly chopped
Instructions:
  • Preheat your oven to 150°C and adjust the shelf to the lowest position. Line a large roasting pan with two sheets of baking paper. Use a small, sharp knife to cut off the rind about 10cm from the shank end of the ham. Remove the rind and score the fat in a diamond pattern about 5mm deep. Place the prepared ham in the roasting pan.
  • In a bowl, mix marmalade, brown sugar, lime rind, lime juice, and pistachios. Spread half of the crust mixture over the ham. Bake for 1 hour and 30 minutes, spooning the remaining crust mixture every 20-30 minutes until golden brown. Serve the ham warm or cold.
