Watermelon and fetta salad recipe

Elevate your summer BBQ with a refreshing Mediterranean watermelon and feta salad.
Ingredients:
  • 1/4 large watermelon, peeled, thinly sliced, cut into wedges
  • 2 Lebanese cucumbers, halved, thinly sliced diagonally
  • 1 red oak lettuce, leaves separated, coarsely torn
  • 1 red onion, thinly sliced
  • 150g marinated fetta, coarsely crumbled
  • 50g olive
  • 250.00 ml mint leaves
  • 125.00 ml coriander leaves
  • 60ml olive oil
  • 42.00 gm lime juice
  • 14.40 gm honey
  • 5.90 gm Dijon mustard
  • 20.00 ml pistachio dukkah
Instructions:
  • In a large bowl, toss together the refreshing watermelon, crisp cucumber, fragrant lettuce, zesty onion, tangy feta cheese, briny olives, and aromatic mint and coriander.
  • Combine the oil, lime juice, honey, and mustard in a screw-top jar, shake vigorously until fully mixed, and season to taste.
  • Pour the dressing over the salad, toss gently to mix, sprinkle with dukkah, and serve right away.
