Watermelon, fetta and pomegranate salad recipe

Refreshing watermelon salad with feta and pomegranate, ideal for BBQs and parties.
Ingredients:
  • 1kg watermelon, peeled, cut into thin wedges
  • 1/2 small red onion, thinly sliced
  • 60g olive
  • 200g fetta, thickly sliced
  • 125.00 ml mint leaves
  • 40.00 ml pomegranate seeds
  • 3 tsp finely chopped pickled jalapeños
  • 60g pkt Baby Spinach
  • ¾ cup (185ml) pomegranate juice
  • 14.40 gm honey
  • 1 small garlic clove, bruised
Instructions:
  • Prepare the pomegranate dressing by heating pomegranate juice in a saucepan until it boils and reduces to 2 tablespoons. Let it cool slightly, then pour it into a jar and mix in the oil, honey, garlic, and seasonings. Shake well, then remove the garlic before using.
  • On a large serving platter, layer watermelon, spinach, onion, and olives. Top with feta and mint, sprinkle with pomegranate seeds and jalapeño, season, and drizzle with dressing.
