Watermelon and marinated fetta salad

Colorful salads for dinner with enough leftovers for the next day's lunch!
Ingredients:
  • 1/2 x 320g jar marinated fetta
  • 20.00 ml lemon zest
  • 42.00 gm lemon juice
  • 20.00 ml shredded fresh mint leaves
  • 1kg watermelon
  • 2 gem lettuces, torn
  • 1 Lebanese cucumber, thinly sliced
  • 62.50 ml sliced kalamata olives
  • 37.95 gm walnuts, toasted, chopped
Instructions:
  • Drain feta, saving 1/4 cup of the oil. Combine the reserved oil with lemon zest, lemon juice, mint, salt, and pepper in a bowl.
  • Cut watermelon quarters into 1cm-thick wedges. Arrange lettuce, cucumber, and watermelon on a platter. Top with olive, walnut, and feta. Drizzle with dressing before serving.
