Elevate summer fruits to international fame with stylish makeovers.
Ingredients:
  • 1 tsp coriander seeds
  • 330g (1 1/2 cups) raw or caster sugar
  • 1 vanilla bean, split, seeds scraped
  • 3cm piece ginger, thinly sliced
  • 2 limes, zested, juiced
  • 125g raspberries
  • 2kg (1/4 small) seedless watermelon, peeled, cut into small wedges
  • 125g blueberries
  • Saffron Persian fairy floss, (see note) to serve
Instructions:
  • Prepare a spice pouch by removing the top from a tea bag. Save the string, discard the paper tag and tea leaves. Fill the bag with coriander seeds and tie the top securely with the string.
  • In a saucepan, combine bag, sugar, vanilla bean and seeds, and 500ml (2 cups) water. Stir over low heat until sugar dissolves. Increase heat to medium and simmer for 10 minutes until syrupy. Remove from heat, then add ginger, lime zest and juice, and 10 raspberries, gently crushing them with a spoon. Freeze for 30 minutes until icy cold.
  • Arrange the remaining fruit in glasses, drizzle over the syrup, and finish with a sprinkle of fairy floss.
