Indulge in a delectable berry dessert bursting with flavor!
Ingredients:
  • 53.75 gm caster sugar
  • 1 vanilla bean, split
  • 400g piece seedless watermelon, peeled, cut into 2cm pieces
  • 125g fresh raspberries
  • 125g fresh strawberries, hulled, quartered
Instructions:
  • In a saucepan over low heat, mix sugar, vanilla bean, and 1/3 cup cold water. Stir and cook for 5 minutes until the sugar dissolves. Increase heat to medium and simmer for another 5 minutes until slightly reduced. Pour into a bowl and let it stand for 15 minutes to cool. Remove and discard the vanilla bean.
  • Combine the watermelon and berries with the sugar mixture, ensuring they are well coated. Chill in the refrigerator for about 1 hour until cold. Enjoy with Nougat semifreddo as a delightful pairing (refer to related recipe for details).
