Watermelon and feta bites

Impress your guests with a memorable party menu that will be the talk of the town until next year!
Ingredients:
  • 125.00 ml pistachio kernels
  • 1/2 tsp finely grated lemon rind
  • 1/4 tsp cracked black pepper
  • 0.60 gm sea salt
  • 120g feta
  • 1kg seedless watermelon, peeled, cut into 36 cubes
  • 62.50 ml small fresh mint leaves
Instructions:
  • In a small frying pan over medium heat, gently toast the pistachios for about 5 minutes until they turn light brown, stirring occasionally. Transfer the pistachios to a bowl and let them cool for 5 minutes before using.
  • Combine pistachios, lemon rind, pepper, and salt in a food processor. Pulse until finely chopped, then transfer to a shallow bowl.
  • Slice the feta into 2cm-wide slices, then cut each slice into 5mm-thick slices. Assemble by placing a watermelon cube on a plate, topping it with a mint leaf and a piece of feta. Secure with a toothpick and arrange on a platter. Repeat with the remaining watermelon, mint leaves, and feta. Serve with pistachio mixture.
