Watermelon and feta salad

Boost watermelon with pumpkin seeds & feta for a delicious upgrade!
Ingredients:
  • 9.20 gm olive oil
  • 125.00 ml pumpkin seeds
  • 0.60 gm sea salt
  • 2.4kg (1/2 small) seedless watermelon, peeled, quartered
  • 100g feta cheese
  • 56.88 gm lemon-scented extra-virgin olive oil (see note)
Instructions:
  • In a cold frying pan, combine oil and pumpkin seeds. Heat over medium heat, stirring occasionally, for 10 to 15 minutes until golden brown. Sprinkle with sea salt, then transfer the toasted seeds to a bowl to cool.
  • Cut the watermelon into 1cm-thick wedges and elegantly arrange them on a large plate.
  • Top juicy watermelon with tangy feta cheese, a hint of lemon-infused oil, crunchy pumpkin seeds, and a sprinkle of zesty cracked black pepper. Serve immediately for a delightful and refreshing salad. Enjoy!
