Refreshing watermelon and tangy feta salad topped with zesty ouzo dressing.
Ingredients:
  • 1/4 (about 1.3kg) seedless watermelon, rind removed, cut into thin wedges
  • 250.00 ml fresh mint leaves
  • 1/2 red onion, cut into thin wedges
  • 50g low-fat feta, thinly sliced
  • 40.00 ml red wine vinegar
  • 36.40 gm olive oil
  • 20.00 ml ouzo
  • Salt & freshly ground black pepper
Instructions:
  • Whisk together vinegar, oil, and ouzo in a jug until combined. Taste and season with salt and pepper.
  • Place watermelon, mint, onion, and feta on serving plates in a visually appealing manner. Drizzle with ouzo dressing and serve promptly.
