Watermelon salad and feta with cucumber noodles

Refreshing watermelon and feta salad is a perfect summer side dish.
Ingredients:
  • 3 lebanese cucumbers
  • 36.40 gm extra virgin olive oil
  • 40.00 ml white balsamic vinegar
  • 5.90 gm wholegrain mustard
  • 700g seedless watermelon, peeled, cut into triangles
  • 100g fetta, crumbled
  • 62.50 ml fresh mint sprigs
Instructions:
  • Create delicate cucumber noodles by spiralizing the cucumber using a vegetable spiralizer.
  • In a small bowl, mix together the oil, vinegar, and mustard, then season with salt and pepper. Place the bowl in the center of a large round platter. Surround the dressing with watermelon and cucumber. Sprinkle with feta and mint before serving.
