Marmalade-glazed pork with bean and celery salad

Get ready to dazzle with this delicious marmalade-glazed BBQ pork dish!
Ingredients:
  • 280g pork loin chop
  • Olive oil cooking spray
  • 200g green beans, trimmed, halved
  • 1/2 small red onion, thinly sliced
  • 2 celery stalks, trimmed, thinly sliced diagonally
  • 100g mixed salad leaves
  • 23.40 gm wholegrain mustard
  • 40.00 ml white wine vinegar
  • Pinch caster sugar
  • 108.90 gm mandarin and orange marmalade
  • 3cm piece fresh ginger, grated
  • 1 tsp fennel seeds
  • 40.00 ml chopped fresh flat-leaf parsley leaves
  • 2 garlic cloves, crushed
Instructions:
  • Create a flavorful glaze by mixing marmalade, ginger, fennel seeds, parsley, and garlic in a jug.
  • Place the pork in a shallow glass or ceramic dish and pour the marinade over it. Make sure to turn the pork to coat it evenly. Cover the dish and refrigerate overnight for maximum flavor infusion.
  • Preheat a barbecue chargrill or chargrill pan over medium heat. Spray the pork with oil and cook for 4 to 5 minutes on each side until browned and fully cooked. Transfer to a plate, cover with foil, and let it rest for 5 minutes before serving.
  • Place beans in a microwave-safe bowl with 2 teaspoons of cold water. Cover and microwave on HIGH for 1 minute 30 seconds until just tender. Then, rinse under cold water and drain.
  • Mix beans, onion, celery, and salad leaves in a big bowl. In a separate container, blend mustard, vinegar, oil, and sugar with a fork. Drizzle the dressing over the salad and toss lightly to mix everything together.
  • Accompany the succulent pork with a crisp and refreshing salad.
