Mustard pork fillets with roasted pears

Enjoy a satisfying and flavorful meal.
Ingredients:
  • 36.40 gm extra virgin olive oil
  • 2 (about 800g) pork fillets
  • 2 red onions, cut into quarters
  • 4 williams' pears, quartered
  • 46.80 gm wholegrain mustard
  • 8 prosciutto slices
  • 60ml maple syrup
  • 1 orange
  • 250ml chicken stock
Instructions:
  • Preheat the oven to 200°C. Heat half of the oil in a large frying pan over high heat. Season the pork with salt and pepper, then sear in the pan for 1-2 minutes on each side until beautifully golden. Transfer the pork to a clean work surface.
  • Sauté the onion and pears in the pan until lightly caramelised, then take it off the heat.
  • Evenly coat each pork fillet with mustard, then wrap them with prosciutto. Place them in a roasting pan with pear and onion. Drizzle with maple syrup and remaining oil. Roast in preheated oven for 25 minutes for medium, or until desired doneness. Remove from oven, transfer to a plate, cover with foil, and let rest for 10 minutes before serving.
  • Zest the orange using a zester or vegetable peeler, making sure to remove only the orange part of the rind. Then, juice the orange.
  • - Heat the roasting pan with pan juices on medium heat. Pour in the orange juice and chicken stock and bring to a boil. Stir occasionally and simmer for 5 minutes until the sauce reduces by half. Take off the heat and mix in the orange zest. Season with salt and pepper to taste.
  • Slice the pork with a sharp knife into thick pieces. Plate the pork along with the pears and onion. Drizzle sauce over the top and serve promptly.
