Crunchy pork crackle with creamy bean mash - a quick and satisfying meal for four.
Ingredients:
  • 4 x 220g pork loin chops
  • 28.60 gm honey
  • 20.00 ml mustard powder
  • 6 sage leaves, finely chopped, plus extra leaves to serve
  • 3 garlic cloves, crushed
  • 80ml olive oil
  • 75g unsalted butter
  • 2 x 400g cans butter beans, rinsed, drained
  • 125ml milk
  • 1 small radicchio, leaves torn
  • 150g green beans, blanched, halved lengthways
  • Juice of 1 lemon
Instructions:
  • Preheat the oven to 250C. Carefully remove skin and fat from the chops in one piece using a sharp knife. Pat the skin dry and lay it on a baking tray. Roast until crackled, about 20 minutes.
  • Prepare a flavorful mixture by combining honey, mustard powder, sage, two-thirds of the garlic, and 2 tablespoons of oil. Massage this mixture over the pork chops. Heat the remaining 2 tablespoons oil in a large frypan over medium heat, then cook the pork chops for 5 minutes per side until beautifully caramelized and fully cooked. Let the pork chops rest, lightly covered with foil, for 5 minutes before serving.
  • In a pan over medium heat, melt butter. Sauté the remaining garlic until fragrant for about 1 minute. Add butter beans, season, and cook for 2-3 minutes until warmed through. Mash roughly with a fork while adding milk.
  • In a bowl, toss together radicchio, green beans, and lemon juice. Drizzle with additional olive oil and serve with chops, crackling, bean smash, and extra sage leaves.
